    This Scrambled Egg Toast is so easy to make, filling, and so incredibly tasty, that it is going to make your morning better. Guaranteed.

    Egg lovers, unite! Some people say that breakfast is the most important meal of the day. I think they might be onto something. I have a special breakfast treat for you today – The Best Scrambled Egg Toast recipe! It is one of the most loved recipes in my family and for a good reason. It is SCRUMPTIOUS! It uses simple ingredients and it's one of the most used easy recipes in my family. What would be a better way to start your day than a tasty scrambled fresh egg on top of crunchy, buttery toasted bread?

    What Makes This Egg Toast Recipe the Best?

    There is a secret ingredient that takes scrambled eggs from good to super tasty. It is feta cheese. Feta adds a wonderful texture and improves the taste of scrambled eggs. Of course, you'll want to use good-quality feta cheese. Try to find the kind that is sold in bricks, not crumbles. If you'd like, you can order feta cheese from Amazon.

    Main Ingredients

    • Bread. There is no best bread, just use your favorite kind. Whole wheat, keto bread, or even tortillas work well too. A good slice of bread is all you need.
    • Butter. Real butter and no fake substitutes, please.
    • Eggs. I like to use organic, pasture-raised eggs, but use whatever you can afford.
    • Feta Cheese. Try to use good quality feta cheese. 
    • Fresh Herbs. Garnish with your favorite herbs, such as dill, parsley, scallions, cilantro, or basil.

    That's it!!! Let's get started.

    How to Make Egg Toast

    1. Spread a thin layer of softened butter on both sides of the bread. Fry the bread over medium heat for about 2 minutes on each side, until a golden brown crust forms. Alternatively, you can use a toaster or toaster oven to toast your bread.

    2. Remove the bread from the frying pan and add ½ tbsp. of butter. Add the eggs and feta cheese and cook on medium-low heat, stirring often, for about 3-4 minutes, until the eggs are cooked through. (Please, note that I am not adding salt, because my feta is quite salty. You might need to add just a pinch of salt, depending on your preference).

    3. Divide the eggs between the bread slices and sprinkle them with fresh herbs (dill, basil, green onions, or parsley). You can also sprinkle some black pepper, or a few red pepper flakes.

    1. What type of bread can be used for Egg Toast? Use your favorite kind! White, wheat, whole grain, rye, pumpernickel, and sourdough bread are all great options. Feeling fancy this morning? Use a croissant instead. 🙂
    2. Where can good quality feta cheese be found? I recommend buying sheep’s feta cheese that is sold in bricks and stored in brine. I buy it from a local Bulgarian store, but good feta cheese is sold in many large supermarkets and health food stores.     4. Is Egg Toast healthy? Eggs make a good source of protein and healthy fat, while the toast is a source of complex carbohydrates. If you use whole wheat bread, you will benefit even more, since whole grains take longer to break down. Together, these will keep you full for a longer time (when compared to cereal or oatmeal) and give you the energy needed for your busy morning. So, I think it's a healthy breakfast.
    5. Can I use only egg whites? Yes, you can do that. You can make some Dutches potatoes or cream Brulee with the remaining egg yolk.
