    This Avocado Egg Salad is creamy, delicious, and easy to make. You'll love this healthy and flavorful egg salad for a meal or as a quick snack.

    This Avocado Egg Salad is made with hard-boiled eggs, creamy avocados, tangy yogurt, and lots of herbs. So tasty, it will make a yummy addition to your meal plan. It's also easy to put together, which is great for those busy days.

    Friends, this Avocado Egg Salad is amazing. While most egg salads use mayo, this one uses plain yogurt, which adds all the creaminess you want while keeping things light. Of course, you can omit it if you want or sub in mayo. Either way, it's good! This Avocado Egg Salad is very easy to make and I'm sure you and your family will love it.

    Main Ingredients

    • Avocados. Make sure that they are not too hard, so they can be made into a nice paste to hold the salad together.
    • Hard-boiled Eggs.
    • Lemon Juice. Freshly squeezed, please.
    • Plain Yogurt. This is light, yet still adds a creamy texture to the salad.
    • Mustard. Adds a nice note of flavor.
    • Chives or Scallions. These herbs add the best flavor. Other herbs, such as dill or parsley, can also be used.
    • Salt and Pepper.

    How to Make Avocado Egg Salad

    1. Cut each avocado in half and then use your knife to slice the flesh in a crosshatch pattern. With a fork, scoop out the skin into a medium-sized bowl.

    2. Mash the avocados with your fork, keeping some chunks, then add the lemon juice, yogurt, mustard, chives, salt, and pepper to it. Mix thoroughly.

    3. Peel your hard-boiled eggs and dice them. Then, stir them into your avocado mash. Make sure everything is well-incorporated.

    5. To assemble the salad into a sandwich, toast the bread and add any greens or veggies you wish. Some great options are spinach, lettuce, cucumbers, tomatoes, bell peppers, and arugula. Spoon the Avocado Egg Salad onto the toasted bread and enjoy.

    Make as much as you plan to eat. Avocado darkens when it's left exposed to the air. It still tastes good the next day, but it just doesn't look as appealing.

    Toast the Bread. Do this before adding the salad. It will help the bread hold its shape better, plus it adds an extra crunch.

    Add extra herbs. Herbs are very healthy and add tons of flavor. So, don't be stingy with these.

    Add a generous amount of salt. Salt brings out the flavor in avocado, so don't be afraid to add a good amount (to your taste preference).

    It's versatile. Serve this salad on any toast, bagel, or even make it a wrap. Crackers pair well with it, too.

    Pre-boil the eggs the night before. Doing this ensures that your meal will be ready in minutes, making for an easy breakfast or lunch.

    To store this Avocado Egg Salad, place it in a bowl with plastic wrap over the top or a very tight lid. It will last for up to 2 days. You may notice some browning on the surface from the avocado, but the taste will be the same.

    On toast or a bagel. To keep the bagel from being too much of a mouthful, you can hollow out the bottom half and fill it with the salad.

    In a wrap. Fill your favorite tortilla with this salad and toppings for an easy, hand-held snack or meal.

    Add extra toppings, such as greens like spinach, lettuce, and arugula.

    Add your favorite veggies, like cucumber, tomato, bell pepper, and onion.
