You guys are going to love this! This recipe is made up of moist and slightly salted feta cheese whipped with sour cream, garlic and dill. You can probably feel the flavor just by reading this… It is perfect for parties: just spread a bit of this goodness on a cracker. It also makes a perfect lunch sandwich (read on for sandwich ideas).

Since there are not that many ingredients in this recipe, and the main one is feta cheese, it is pretty important to use good quality feta. I consider myself a feta expert since I’ve tried all the varieties that are sold out there and I use feta cheese on a DAILY basis. My husband and I are feta fanatics. It’s a little crazy, I know. 🙂

I buy it from a local Bulgarian store here in NJ, but it is possible to order it online from the same store. Or, you can order feta from Amazon. You can also find a good feta cheese in big health food stores. Just remember – you need the kind that is sold in bricks, not the crumbles.

Once you’ve got some feta cheese, it’s time to whip it. Whip it good 🙂 . Just throw all the ingredients in the food processor and blend until smooth. There is no “right” consistency. Just stop blending once it looks good to you. Usually I make it extra creamy and smooth, but sometimes I enjoy those little crumbles inside. See what works best for you.

To make a sandwich, just spread some of the whipped feta on a slice of bread and top it with a caper berry.

I've never seen Bulgarian feta, but I will be sure to look out for it here in the UK. The whole recipe looks delicious. Thanks for sharing it. 🙂

My local grocery store sells different types of feta that they've crumbled from blocks. Most the time it's Greek or Israeli feta but one day they only had Bulgarian so I bought it. By far the best feta ever! My family is obsessed with it now. I've never whipped it though so I'll definitely be trying that now!
