These Cauliflower Steaks are a creative and delicious side that can go with any meal. You'll love their crisp texture and how each one is packed with flavor.

Cauliflower Steaks with tahini sauce

You are going to love these cauliflower steaks. They are a great way to enjoy your vegetables, with each one packing tons of flavor and a nice golden brown crust. These cauliflower steaks have just the right seasonings to make them taste exciting and delicious. This recipe is really simple, too. Only a handful of ingredients are needed to make it.

This is also a very healthy alternative to other cooking methods like stir fry, which uses a lot of oil, or boiling, which leeches out essential nutrients from the cauliflower. Just a drizzle of olive oil and some seasoning, and you have a yummy side dish that your whole family - even the kids! - will enjoy. You'll be surprised by how just the right recipe can change the mind of the most uninterested vegetable eater at the table.

Main Ingredients

Ingredients for the cauliflower steaks

Cauliflower. You'll need two medium heads to make 4 steaks.

Olive Oil. You could also substitute this with other healthy oils, such as grapeseed or avocado oil.

Ground Flax Seeds. These add a really nice crunch after they've been cooked. You could also use ground chia seeds instead of flax if you prefer.

Za'atar Spice. This seasoning adds the most amazing flavor! It can be found in large health food stores, or on Amazon.com. I buy this one. It's very versatile and tastes great on any roasted vegetable or meat, so you don't have to worry about having any leftovers.

Onion Powder. This is used to give the cauliflower extra flavor. It could be omitted if you don't like the flavor.

Salt.

How to Make Cauliflower Steaks

1. Remove the cauliflower stems and leaves. Cut each cauliflower head down the middle. Then, move the knife about 1 ½ – 2 inches to the left, and cut the steak. Do the same on the right. (each head makes 2 steaks). Reserve the remaining cauliflower for future use.

2. Lay the steaks on a baking sheet and drizzle them with olive oil. Then, sprinkle on the spices. Make sure all of the spices stick to the steaks, so they can bake in and give the cauliflower the best flavor.

3. Bake for 15 minutes at 375 degrees Fahrenheit, flip carefully, and then bake for another 5-10 minutes, depending on the thickness of the steaks. In addition, you can broil them for about 2 minutes, in order to get a beautiful golden crust.

How to Cut the Cauliflower for Steaks

It's best to make two steaks from each cauliflower head. If you attempt to make 3 steaks, your steaks most likely will break during the flipping. Two is best to keep them stable.

First, remove the green leaves and the stem on the bottom. Cut the cauliflower head down the middle.

Then, move the knife about 1 ½ - 2 inches to the left, and cut the steak. Do the same on the right. You should land up with four steaks now.

Tips for Buying the Best Cauliflower

When you're buying cauliflower, there are a few things you should look for so that you get the freshest heads. Make sure the florets are white and creamy in color, and there are no blemishes or spots. The leaves should also be blemish-free. Do not buy one that has a strong smell because it is probably going bad. And also look for a cauliflower head that feels heavy for its size.

What to Do With Leftover Florets

Leftover florets can be stored in the fridge for up to 1 week. During this time, you can use them in other recipes. I usually like to make cauliflower rice or mashed cauliflower with mine. Here are some great recipe ideas you can try:

  • Cauliflower Gnocchi
  • Fried Cauliflower
  • Basic Cauliflower Fritters
  • Roasted Curried Cauliflower

Cauliflower has such a mild flavor that it is often overlooked when vegetables are being added to a meal. But with the right seasonings to give it a yummy flavor, cauliflower acts as a great base. It has really wonderful texture and can be so versatile. I hope you'll give these cauliflower steaks a try and see how easy, convenient, and delicious they really are.

This looks good! I used to tell my sons when they were young, "Don't say you don't like something. It might just be the way it's prepared." It's like you said, "...the right recipe can change the mind of the most uninterested vegetable eater at the table."
