  • 1 cup milk
  • 2 tbsp honey (or brown sugar)
  • 1 tsp vanilla extract
  • 1 cup flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon powder
  • 1 large apple
  • ¼ cup roughly chopped walnuts

  • Combine milk, honey and vanilla extract in a mixing bowl and whisk everything together.
  • In a separate bowl, mix the flour with baking powder, salt and cinnamon powder.
  • Through the sifter add the flour to the milk mixture and stir gently until combined. Set aside.
  • Peel and core the apple. Using a grater or food processor, grate the apple and add it to the batter together with walnuts. Stir it slightly to combine.
  • Heat up a skillet or a frying pan to medium heat. Spray it with a little cooking oil. Using a ¼-cup to measure, scoop the batter onto the hot skillet. Cook for 1 to 2 minutes until small bubbles form on the surface of the pancakes, and then flip it over. Working in batches, repeat this step until you run out of batter.
