MINI APPLE WALNUT PANCAKES
Fluffy and filled with apples and walnuts, these Mini Apple-Walnut Pancakes will make your morning better!
Servings: 2 people
- 1 cup milk
- 2 tbsp honey (or brown sugar)
- 1 tsp vanilla extract
- 1 cup flour
- 2 tsp baking powder
- ½ tsp salt
- ½ tsp cinnamon powder
- 1 large apple
- ¼ cup roughly chopped walnuts
Combine milk, honey and vanilla extract in a mixing bowl and whisk everything together.
In a separate bowl, mix the flour with baking powder, salt and cinnamon powder.
Through the sifter add the flour to the milk mixture and stir gently until combined. Set aside.
Peel and core the apple. Using a grater or food processor, grate the apple and add it to the batter together with walnuts. Stir it slightly to combine.
Heat up a skillet or a frying pan to medium heat. Spray it with a little cooking oil. Using a ¼-cup to measure, scoop the batter onto the hot skillet. Cook for 1 to 2 minutes until small bubbles form on the surface of the pancakes, and then flip it over. Working in batches, repeat this step until you run out of batter.
