FLOUNDER WITH CARROT NOODLES
This tasty, pan-seared Flounder with Carrot Noodles is a simple and filling meal. It makes a perfect lunch or dinner, and you won’t believe how delicious these carrot noodles are!
Servings: 4 servings
- 4 flounder fillets
- 2 tbsp. olive oil or your favorite oil
- 1 lb. carrot noodles*
- 1 tbsp. butter
- 2 garlic cloves minced
- 1/2 cup Half & Half or coconut milk
- 1 tsp. paprika plus more for fish
- 1/4 tbsp. red pepper flakes optional
- Parsley to garnish
Heat up the olive oil in a large, non-stick skillet on medium-high heat. Add the flounder fillets and sprinkle with a little salt, pepper, and paprika. Fry for about 2-3 minutes, depending on the thickness of the fillets.
Gently flip the fish and sprinkle with some more salt, pepper, and paprika. Cook for another 2 minutes, or until the fish is cooked through. Remove the fish from the skillet and set aside.
To the same skillet, add the butter and spiralized carrots. Season them with salt, pepper, paprika, and red pepper flakes. Use kitchen tongs to stir the noodles, and cook for about 5-7 minutes, until they reach the desired softness.**
Add garlic and cream, and cook for another minute. Remove the skillet from the heat.
Place the flounder fillets on top of the carrot noodles and sprinkle with freshly chopped parsley. Serve.
* Use store-bought or homemade spiralized carrots. To make spiralized carrots at home, just peel the carrots and cut off the ends. Spiralize using the “spaghetti” setting on your spiralizer.
** Depending on your personal preference, you may enjoy the carrot noodles on the “crunchier” or “softer” side. Adjust the carrot cooking time until the “noodles” are cooked to your liking.
