BAKED SLICED POTATOES
Sliced Potatoes baked to perfection with bacon and thyme.
Servings: 3 servings
- 6 potatoes medium sized
- 6 bacon strips chopped into small pieces
- 2 heads of garlic for roasting
- 2 tbsp olive oil to drizzle
- fresh thyme
- 3 garlic cloves minced
- salt to taste
Wash the potatoes thoroughly under running water. Then, slice them thinly, but do not cut all the way through. You may choose to place the potato on a serving spoon while slicing to prevent the knife from slicing the potato all the way through.
Stuff the bacon pieces and some thyme in between the potato slices. Next, slice off the top of a head of garlic, so the cloves inside are exposed. Place the potatoes and the garlic on the baking dish ( I use parchment paper underneath.) Drizzle everything with olive oil.
Cover the baking dish with foil and bake in a preheated to 400F oven for 45 minutes. Remove the foil and keep baking for another half an hour. Note: cooking time may vary depending on the size of your potatoes. To make sure that the potatoes are cooked, just stick a knife through one. If it cuts through easily, the potatoes are ready.
Once ready, garnish with minced garlic, fresh thyme and sprinkle with salt.
