Quinoa with Mushrooms and Feta
Quick and healthy Quinoa with Mushrooms and Feta makes a tasty and protein-packed lunch or dinner.
Servings: 2 servings
- 2 cups cooked quinoa (see note)
- 8 oz fresh shiitake mushrooms
- 1 tbsp butter
- 1/2 cup crumbled feta cheese
- 1 tbsp thyme leaves
Wash the mushrooms, discard the stems and cut the tops into large pieces.
Melt butter in a large skillet over medium high heat, and fry the mushrooms for about 4-5 minutes, until they start to brown.
Add the quinoa, feta and thyme leaves and stir everything together. Taste for salt. (You may not need any because feta is fairly salty).
Note: You'll have better results if you cook quinoa in vegetable or chicken broth. However, you may also boil it in slightly salted water. You need about 3/4 cup of uncooked quinoa in this recipe.
