Halloween Cheese Cups

Mini fillo shells, stuffed with tasty cheese salad and garnished with olives, make these cute Halloween Cheese Cup monsters.
- 1 cup shredded Cheddar cheese
- 1 cup diced tomatoes (juice squeezed out)
- 2 minced garlic cloves
- 2 tbsp chopped dill
- 2 tbsp mayo
- 15 mini fillo shells
- 30 black olives, pitted
- 1 slice mozzarella cheese
- finely shredded Cheddar to garnish
Prepare the filling by mixing together cheddar, tomatoes, mayo, garlic and dill. Set aside.
Cut mozzarella into small pieces and stuff olives with it.
When ready to serve, place a small amount of filling into the fillo shell and sprinkle with some finely grated cheddar. Place the "eyes" on top.
