Ingredients

  • 1 lb potato gnocchi (homemade or store bought)
  • 1 lb sweet Italian sausage meat
  • 12 oz your favorite marinara sauce
  • 1/3 cup good quality feta cheese crumbles
  • chopped parsley to garnish

Instructions

  • In a medium pot, bring water to boil. Add the gnocchi and cook according to the package instructions. Drain, rinse well with cold water and set aside.
  • Form a small, bite-sized meatballs from the sweet Italian sausage. Place them in a large, non-stick skillet and cook for about 5 minutes on medium heat, shaking the skillet occasionally to turn the meatballs.
  • Cook for about 5 minutes on medium heat, shaking the skillet occasionally to turn the meatballs.
  • Add marinara sauce and cook for another 2-3 minutes.
  • Sprinkle feta cheese on top and garnish with parsley. Serve immediately.
