Ingredients

For the salad:

  • 3 cups chopped broccoli florets
  • 1 medium apple, cored and finely chopped
  • 1 cup grated carrot
  • 1 cup canned sweet corn
  • 1 cup toasted walnuts

For the dressing:

  • 1/2 cup good quality mayo
  • 1 1/2 tbsp white sugar
  • 1 1/2 tbsp fresh lemon juice
  • 1 tbsp vinegar
  • 1/4 tsp black pepper
  • 1/8 tsp salt

Instructions

Dressing

  • In a small bowl, mix all the dressing ingredients together.

Salad

  • Place the salad ingredients in a large mixing bowl and add as much dressing as you want (I use all of it).
  • Mix the salad well and serve immediately.
