Ingredients

For the dressing:

  • 1/4 cup extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp apple cider vinegar
  • 1/2 tsp dried oregano
  • salt and pepper to taste

For the salad:

  • 2 cups chopped grape (or regular) tomatoes
  • 2 cups chopped cucumbers
  • 1 cup chopped red onion
  • 1 cup small black olives
  • 1 cup cooked quinoa
  • 1 cup crumbled feta cheese

Instructions

  • Prepare the Lemon Vinaigrette by whisking all of the dressing ingredients together.
  • Place all the salad ingredients in a medium bowl and pour the dressing on top.
  • Mix everything well and serve.
