    This Wedge Salad is bright, refreshing, and full of flavor. No matter what you're serving, this salad makes the perfect side dish for any meal.

    If you love a cold salad on a hot day, then this Wedge Salad is just the thing. It's refreshing, simple, and scrumptious. Made with crisp iceberg leaves, juicy tomatoes, and creamy bleu cheese crumbles, it has all the bases covered. The bacon adds a salty, savory flavor that you can't resist.

    Drizzled with a rich and creamy blue cheese dressing, this salad gives you lots of textures and flavors to enjoy. I love this for a light lunch or as a dinner side dish.     • Iceberg Lettuce.
    • Blue Cheese Dressing. Homemade or store-bought.
    • Tomatoes.
    • Bacon.
    • Blue Cheese Crumbles.
    • Scallions.

    How to Cut Iceberg Lettuce for Wedge Salad

    1. Remove the outer leaves from the iceberg lettuce and discard. Wash the remaining lettuce head and pat it dry. Place it onto a large cutting board. Cut the lettuce head in half, and then cut each half again. Cut the core off from the wedges.

    How to Prep Bacon for Wedge Salad

    1. Heat a large frying pan over medium-high heat until hot, add bacon slices, and cook on both sides until the bacon is brown and crispy. Remove from the skillet and place them onto a paper towel. Once cooled down, cut into pieces.

    1. Place the iceberg wedges onto the serving plates and drizzle generously with the blue cheese dressing.

    What dressings work with this salad?

    The dressings that work best for this salad are usually creamy ones, such as Blue Cheese, Ranch, or Caesar.

    Bacon substitute

    If you don't want to use bacon for this dish, then you can substitute candied or toasted walnuts as a great bacon substitute. This is perfect for vegetarians!

    How to make candied walnuts

    To make candied walnuts, heat a skillet over medium heat and add ½ cup walnuts, 1 tablespoon of granulated sugar, and 1 tablespoon of butter. Cook over for 5 minutes, stirring frequently. Transfer to a sheet of parchment paper and separate the nuts right away.

    • Look for good quality iceberg lettuce. Choose a head of lettuce that has tight, springy leaves with no black spots or wilting.

    • Dice the tomato small. Because the wedge isn't very large, be sure to chop the tomatoes to a similar size to the bacon. They should be small so as not to overpower the rest of the ingredients.
