– 14 oz. canned tuna, drained – ¾ cup Parmesan cheese, grated – ½ cup Panko breadcrumbs – 2 large eggs – 3 tbsp. chopped scallions – 1 tbsp. Dijon mustard – ½ tsp. sea salt or to taste – ¼ tsp. pepper or to taste

To a medium bowl, add the tuna fish and the rest of the ingredients. Mix well and allow to rest for 10 minutes.

With the help of your hand, form a small fritter. Add avocado oil to a non-stick skillet and fry the fritters for about 2-3 minutes on each side.
