Steamed Broccoli Rabe

– 4 tbsp. extra virgin olive oil – 6 tbsp. garlic cloves, thinly sliced – ¼ tsp. red pepper flakes or to taste – ¼ cup water – 2 bunches broccoli rabe – ¾ tsp. sea salt or to taste




Wash a bunch of broccoli rabe and place it on a cutting board. Cut off the tips of the broccoli rabe stems and discard. Then slice the bunch in the middle, separating the leaves from the thick stems. Place them into two separate bowls.



Pour the olive oil into a large pot and add the garlic. Cook the garlic over medium-low heat until it starts to brown.



Now add water and the stems of the broccoli rabe. Cover the pot tightly with a lid and let it cook for 15 minutes.



Add in the leafy parts by placing the leaves right on top of the stems and then season them with salt. Cover again and cook for another 15 minutes, making sure that there is enough liquid left. Taste, and then add more salt and black pepper if needed.
