– 1 small cabbage, thinly sliced (about 2 lbs.)
– 1 medium onion, diced
– 2 small carrots, shredded
– 2 tbsp. olive oil
– 1 tbsp. tomato paste
– 1 tbsp. apple cider vinegar
– ¾ tsp. salt or to taste
– ½ tsp. pepper or to taste
Add oil to a large skillet over medium-high heat. Sauté the onions for a minute or until just starting to soften and then add the carrots, and cook for a few more minutes.
Add in the tomato paste, apple cider vinegar, and season with salt and pepper to taste. Stir everything well and turn off the heat. Garnish with fresh parsley or dill. Serve.
