Radiatore Pasta in Creamy Sauce

– 10-12 oz. radiatore pasta – 2 tbsp. olive oil – ½ medium onion, diced – 2 large garlic cloves, minced – 2 ½ tbsp. tomato paste – 1 tsp. dried basil – ½ tsp. salt or to taste – ⅓ tsp. red pepper flakes or to taste – 1 shot vodka optional – 1 cup heavy cream – ¾ cup grated Parmesan

Bring a large pot of water to a boil and generously season with salt. Add the pasta and cook, according to the package instructions. (Radiatore usually cooks in 10-11 minutes).

To a large skillet, add the olive oil and onions and cook for about 5 minutes over medium heat until the onions soften nicely.

At this point, add tomato paste, garlic, salt, dried basil, and red pepper flakes. Stir well and cook on low for a minute or two.
