Twice Baked Potato Casserole

Simple, yet VERY tasty! Try it!


– 4 large potatoes (about 2 lbs.) – 1 small onion, minced – 1 tsp. salt or to taste – 1 tsp. pepper or to taste – ¼ cup chopped dill – ¼ cup chopped parsley – 2 cups shredded Cheddar cheese or your favorite kind – 1 ½ cup sour cream

Wash the potatoes and bake at 425F for 1 hour

Peel the potatoes and shred them

Add the minced onion, fresh herbs, salt, and pepper. Mix it gently

Add cheese, sour cream and mix

Transfer the potato mixture to a saucepan

Bake in a preheated 425ºF oven for about 30-35 minutes.
