Crispy Fried Shrimp

– 1 lb. jumbo shrimps peeled, deveined, tail on – 1 cup panko breadcrumbs – 2 eggs – 1 tbsp. water – ⅓ cup all-purpose flour – ⅓ cup cornstarch – 1 ½ tsp. Cajun or Old Bay Seasoning – ½ tsp. salt – oil for frying about ½ cup

Step 1

In a shallow bowl, whisk the eggs together with 1 tablespoon of water.

Step 2

In a second bowl, mix together the flour, cornstarch, seasoning, and salt. Add the breadcrumbs into the third bowl.

Step 3

Coat the shrimp in flour, dip them in egg, and then press them into the bread crumb mixture, thoroughly coating them.

Step 4

Heat a heavy-bottomed skillet over medium-high heat and add about ½ cup of oil. Working in batches, cook the shrimp, turning once, until golden, about 1 to 2 minutes per side.

Step 5

Transfer to a baking sheet and place them in the oven to keep warm. Repeat with the remaining shrimp.
