– 1 lb. jumbo shrimps peeled, deveined, tail on
– 1 cup panko breadcrumbs
– 2 eggs
– 1 tbsp. water
– ⅓ cup all-purpose flour
– ⅓ cup cornstarch
– 1 ½ tsp. Cajun or Old Bay Seasoning
– ½ tsp. salt
– oil for frying about ½ cup
Heat a heavy-bottomed skillet over medium-high heat and add about ½ cup of oil. Working in batches, cook the shrimp, turning once, until golden, about 1 to 2 minutes per side.
