Cilantro Lime Rice and Black Beans

Simple, yet VERY tasty! Try it!


– 2 tbsp. olive oil – 1 ½ cup long-grain rice (such as Basmati) – 1 ½ cup water – 1 tsp. salt – ½ tsp. lime zest – 14 oz. (1 can) black beans, cooked and rinsed – 1 cup chopped cilantro – 2 tbsp. lime juice

Heat the olive oil in a large saucepan. Add the rice and stir until it is covered with olive oil. Cook, stirring occasionally, until rice begins to brown.

Add the water, salt, and lime zest and bring to a boil. Cook for 15 minutes without opening the lid.

Add the black beans, cilantro, and lime juice. Stir everything together and cover it with a lid again. Let it rest for 10 minutes before serving.
