Chipotle Sofritas (Copycat Recipe)

What you will need:

– 1 lb. firm tofu – 2 tbsp. grapeseed oil or any other oil For the Sauce – 2 small tomatoes – ½ small onion – 1 small green pepper – 3 garlic cloves – 2 tbsp. adobo sauce see notes below – 1 tsp. cumin powder – ½ tsp. dried oregano – ½ tsp. salt – ¼ tsp. black pepper – 1 tsp. vinegar – ¼ cup water

Place all of the sauce ingredients into a blender or food processor and blend until it looks like salsa.

Wrap the tofu into 3-4 layers of paper towels and squeeze out as much liquid as possible.

Cut the tofu into ½ inch slices.

Heat oil in a large non-stick skillet. Add tofu and fry, without moving it for 3 minutes on medium heat, until a golden crust forms on the bottom.

Start breaking the tofu slices with the wooden spatula and keep frying and breaking the tofu into small pieces for about 5 minutes.

Add the tomato sauce, stir, and cook for another 3-4 minutes.
