– 1 ½ lbs. chicken thighs, boneless, skinless cut into small pieces – 2 tbsp. olive oil – 1 medium onion diced – 8 oz. mushrooms sliced – 3 medium carrots peeled and cubed – 3 medium potatoes peeled and cubed – 4 cups water or as needed – 2 bay leaves – 1 tsp. salt or to taste – 1 tsp. pepper or to taste – 1 tsp. turmeric powder optional – ⅓ cup chopped parsley
Cook the onions until transparent. Then add the mushrooms, stirring for a few more minutes while they cook.
Add potatoes, carrots, salt, pepper, bay leaf and water to the pan. And cook for 30 minutes on medium heat.
Mix together 2 tablespoons of water and 2 tablespoons of flour. Add it to the stew. Stir. Add the parsley and turmeric, if desired.
