Cheesy Eggplant with Marinara

Simple, yet VERY tasty! Try it!


– 1 medium eggplant – 2 tbsp. olive oil – ½ cup marinara or your favorite tomato sauce – ¾ cup shredded mozzarella – ½ cup shredded Parmesan – ½ tsp. sea salt or to taste – ¼ tsp. pepper or to taste

Wash and slice the eggplant

Grease with olive oil. Season with salt and pepper to taste

Add the marinara.Sprinkle with mozzarella and Parmesan

Garnish and serve.
