– 2 cans (14 oz. each) black beans, drained and rinsed – 1 medium onion, diced – 3 garlic cloves, minced – 1 tsp. paprika – ½ tsp. cumin powder – ¼ tsp. salt or to taste – ¼ tsp. pepper or to taste – 1 cup vegetable broth – 1 ½ tbsp. lime juice – ¼ cup cilantro, chopped – 1 tbsp. plant butter (or regular butter) – 12 6-inch flour tortillas
In a medium saucepan, simmer the beans, onion, garlic, veggie stock, and spices for 15 minutes, until the onion softens nicely and the liquid has almost evaporated.
