Refreshing summer salad made with succulent watermelon, sweet strawberry and salty feta cheese. Perfect for barbecue parties!
I could eat this tasty Watermelon, Strawberry and Feta Salad every day. I love this sexy combination of summer fruits with slightly tangy lemon dressing and of course, my all-time favorite, feta cheese.
My husband and I eat a lot of feta cheese. A lot. During the summer months we eat even more. I add feta to fresh salads and soups, I make sandwiches with it and bake pies with it, I add it to salad dressings and sauces… It just makes everything better. Are there any other feta fans out there? If it’s you, I am sending you a virtual high five.
If you don’t like feta cheese, it means you haven’t tried the good stuff. I recommend buying sheep’s feta cheese that is sold in bricks and stored in brine. I buy it from a local Bulgarian store, but it is also possible to get it online. Check out this Sheep’s Milk Feta Cheese.
Here is a full list of ingredients you’ll need:
- tasty watermelon
- sweet strawberries
- good-quality feta cheese
- a few fresh basil leaves
- olive oil
- lemon juice
Although this salad tastes fantastic, it doesn’t store well, so I definitely suggest only making as much salad as you are planning to eat and don’t make it ahead of time. Even a few hours of refrigeration will make this salad soggy and it won’t taste as good as the fresh stuff. It’s so good, though, that I am sure there’ll be no leftovers. Watermelon, Strawberry and Feta SaladPrint Pin Rate
- 4 cups cubed watermelon
- 2 cups chopped strawberries
- 1 cup crumbled feta cheese
- 1 tbsp chopped fresh basil
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Prepare the salad dressing by mixing the oil with lemon juice thoroughly.
- Place watermelon, strawberries and basil in a large mixing bowl and sprinkle the dressing on top. Give it a stir.
- Add feta cheese to the salad and stir just a little. Enjoy!
