    This Spring Mix Salad is so refreshing and flavorful. Made with cherry tomatoes, cucumbers, feta cheese, and a homemade dressing, it makes a perfect side or light meal.

    If you love a delicious and simple salad, then this Spring Mix Salad is for you. It's made with cucumbers, tomatoes, avocado, feta cheese, seeds, and a tangy homemade dressing. There is so much great flavor in this dish, and it's really easy to make, too.

    This salad is great on its own, but you can also serve it with other main dishes or sides to make it a full meal. You can even add protein to the salad to make it more satisfying. But however you serve it, you'll enjoy every bite of this scrumptious Spring Mix Salad.

    What is Spring Mix

    Spring mix is a term used for a collection of greens, usually containing spinach, tender baby lettuce, arugula, young beet leaves, and others. It may also include red and green romaine, chard, endive, and radicchio.

    Main Ingredients

    • Spring Mix.
    • Cucumbers.
    • Tomatoes.
    • Avocadoes.
    • Onion.
    • Seeds or nuts. I used pumpkin and sunflower seeds.
    • Cheese. Feta, blue cheese, and mozzarella pearls are all perfect for this salad.
    • Dressing ingredients. Olive oil, apple cider vinegar, mustard, garlic, maple syrup, salt, and black pepper.

    How to make Spring Salad

    1. To a small jar, add the olive oil, apple cider vinegar, mustard, garlic, maple syrup, salt, and pepper. Cover with a tight lid and shake well.

    2. To a large mixing bowl, add the spring mix, cucumbers, tomatoes, avocado, onion, feta cheese, pumpkin seeds, and sunflower seeds. Pour the dressing on top and mix well. Serve immediately.

    Helpful Tips & Tricks

    • Pre-mix the dressing. To get the full flavor of the dressing, pre-mix it in a jar so it's emulsified when you add it to your Spring Mix Salad.
    • Cut the veggies to a uniform size. So one vegetable doesn't dominate the salad, cut everything to a similar size. This way, they can all fit in a bite.
    • Dress the salad right before serving. To avoid soggy greens, dress the salad right before you intend to serve it. The longer it sits, the more the dressing is going to be absorbed into the leaves.
    • Make a double batch of dressing. Have some of this tasty dressing on hand for whenever you want a quick salad. Double the batch and store it in the fridge.

    Variations to this Recipe

    • Substitute different cheeses. I used feta cheese for this salad, but you could also use blue cheese, gorgonzola, and mozzarella pearls.
    • Add other nuts and seeds. Add some flaxseed, chopped cashews, almonds, or walnuts to this Spring Mix Salad.
    • Substitute another dressing. Make this with lots of different dressings for a fresh spin. Try it with this Greek Salad Dressing, No Oil Balsamic Salad Dressing, or Apple Cider Vinegar Salad Dressing.
    • Add protein. Turn this into a filling meal by adding some grilled chicken breast, steak, shrimp, or salmon.

    How to Store it

    You can store the dressing in a lidded container for up to 2 weeks in the fridge. But the salad will only last a day once it's been tossed in dressing. Just cover it with plastic wrap or place it in an airtight container in the refrigerator.

    What to Serve this Spring Mix Salad with

    • Pasta. Make this salad a side dish to your favorite pasta, such as this Quick Zucchini Pasta, Chicken Penne with Sun-Dried Tomato Sauce, Spaghetti with Olive Oil and Garlic, or Creamy Calamari Fettuccine.
    • Soup. Pair it with a bowl of soup, like this Hearty Mushroom Soup, Quick Orzo Soup, Chickpea Noodle Soup, or Turkey Cabbage Soup.
    • Protein. Add it to a meal of Chicken Rice Casserole, Salmon in Creamy Sauce, or Spinach Stuffed Chicken Breast.
    • Sides. Enjoy this Spring Mix Salad alongside some Parmesan Mashed Potato Cakes, Steamed Broccoli Rabe, Parmesan Sweet Potatoes, or Roasted Asparagus.

    Ingredients
      

    • 4 oz. spring mix
    • 2 medium cucumbers, peeled and sliced
    • 1 cup cherry tomatoes, cut in half
    • 1 large avocado, peeled and sliced
    • ¼ medium onion, sliced thinly
    • ½ cup feta cheese crumbles*
    • ¼ cup pumpkin seeds toasted or raw
    • ¼ cup sunflower seeds toasted or raw

    For the dressing

    • 3 tbsp. olive oil
    • 2 tbsp. apple cider vinegar
    • 1 medium garlic clove, minced
    • 1 tsp. Dijon mustard
    • 1 tsp. maple syrup
    • ½ tsp. sea salt or to taste
    • ¼ tsp. pepper

    Instructions
