These Spiralized Fried Potatoes are incredible! So simple to make, filling, and flavorful, you are going to crave more. They’re also vegan.

I just can't wait for you to try these Spiralized Fried Potatoes! This is truly one of the recipes you want to make over and over again. All of the flavors work great together, and it tastes amazing even when cold.
SPIRALIZING VEGETABLES
As the recipe name suggests, the vegetables have to be spiralized. So if you don't own a spiralizer, you can buy one online, or you can try to slice all of the vegetables into thin, long, straws. It can be time consuming, so you may want to put your favorite TV show on, or listen you a book on Audible.com. (I am currently listening to Mini Habits: Smaller Habits, Bigger Results by Stephen Guise).
HOW TO MAKE SPIRALIZED FRIED POTATOES:
1. Heat up a large, non-stick skillet on medium-high heat. Add the vegetable oil and onions, and cook for about 2 minutes.
2. Add the carrots and cook for another 2 minutes.
3. Add the potatoes and cook them for about 5-7 minutes, until they begin to soften.
4. Add the bell pepper, soy sauce, and red pepper flakes. Cook for about 4-5 minutes, until potatoes are fully cooked and no sauce remains in the skillet. Taste for seasoning, and if needed, add salt.
5. Garnish with fresh parsley or cilantro. Serve.
