ABOUT THE ROASTED PEPPERS
You'll need some roasted red peppers for this recipe. You can use store-bought, jarred roasted peppers, or roast the peppers yourself. Both options work well, so the choice is yours.
If you prefer to buy jarred roasted peppers, they are sold in all large grocery stores, usually located in the pickle aisle, or somewhere next to olives. You can also buy roasted peppers on Amazon.
HOW TO MAKE SALMON IN ROASTED PEPPER SAUCE
1.Season the salmon fillets with salt and pepper.
2. Heat the oil in a medium non-stick skillet over medium heat. Cook the salmon fillets flesh-side down first, for 5 minutes on each side, or until cooked to your liking. Once cooked, remove them from the pan and set aside.
3. To the same pan, add butter and garlic. Cook for 1 minute, add the roasted peppers, and cook for 2 more minutes.
4. Add the spinach and allow it to wilt.
5. Reduce the heat to low, and add Half & Half, Parmesan, red pepper flakes, parsley, salt, and pepper. Stir and bring to a simmer.
6. Return the salmon to the pan and spoon the sauce over each filet.
7. Serve over pasta, rice, or steamed vegetables.

SALMON IN ROASTED PEPPER SAUCE
Ingredients

- 1 tbsp. butter

- 4 oz. roasted red peppers diced
- 4 cups fresh baby spinach
- ½ cup Half & Half or heavy cream
- ¼ cup grated Parmesan cheese
- ¼ tsp. red pepper flakes or to taste
- ¼ cup chopped parsley
- Salt and pepper to taste

Always a success with my home. I like adding some extra pepper, paprika and cayenne pepper to my sauce. My boyfriend tells me he feels as if he is in a restaurant when I make this for him.

Tasty and quick. After one try, I’d be happy to make this again, but I’d perhaps bake the salmon at the same time as I was roasting the peppers, then flake it into the sauce. I might try adding a pinch of saffron, and/or a little bit of chilli next time too. Thanks - great addition to the repertoire.

I was looking for a new salmon recipe. This looked so good I made it. It was very simple to make and was delicious. I didn't have spinach on hand so Iused sweet peppers, sweet onions and French cut green beans.

My neighbor prepared this for my early birthday dinner and it was scrumptious and she served it with a lemony couscous.
