    • Rotini pasta (10 oz / 285 g) – Uncooked
    • Chicken breast or thighs (12 oz / 340 g) – Cut into pieces
    • Olive oil (2 tbsp / 30 ml)
    • Onion (½ medium / 75 g) – Diced
    • Garlic (3 cloves) – Minced
    • Tomato paste (2 ½ tbsp / 40 g)
    • Heavy cream or Half & Half (1 cup / 240 ml)
    • Parmesan cheese (½ cup / 50 g) – Grated
    • Dried basil (1 tsp / 1 g) – Or Italian seasoning
    • Sea salt (½ tsp / 3 g) – To taste
    • Black pepper (¼ tsp / 1 g) – To taste
    • Red pepper flakes (¼ tsp / 0.5 g) – Optional, for heat

    How to make Rotini Pasta with Chicken

    1. Cook the rotini. Add rotini pasta to salted boiling water and cook 12–13 minutes, according to package instructions.

    2. Cook onion. While the pasta cooks, heat olive oil in a large skillet. Add onion and cook for 5 minutes, until softened and lightly browned.

    3. Add chicken and tomato paste. Stir in the garlic, tomato paste, and chicken. Cook 7–8 minutes, until chicken is nearly cooked through.

    4. Make the sauce. Reduce the heat to low. Add the heavy cream, Parmesan, dried basil, salt, pepper, and red pepper flakes. Bring to a gentle simmer. Drain pasta and reserve pasta water.

    5. Combine & serve. Add pasta to the sauce and stir well. Thin the sauce with a splash of pasta water if needed. Serve immediately. 😍
