This Roasted Pepper Stuffed Chicken Breast is, hands down, the most delicious way to enjoy chicken! It’s easy to make, and you will feel like you’re eating in a 5-star restaurant.

If you try this recipe, I can guarantee that you’ll make it again. The chicken is so tender and juicy, and the creamy-dreamy roasted pepper stuffing is addicting. The best part is that you’ll need very few ingredients, about 10 minutes of active cooking time, and once these beauties are in the oven, you’ll have time to make a salad and set the dinner table.
This is one of my husband’s favorite recipes, and I love to make it when I expect guests. Simple, easy, tasty!

THE ROASTED PEPPER STUFFING
The stuffing is made with only five ingredients:
- Roasted Peppers. You can use store-bought, jarred roasted peppers, or roast the peppers yourself. Both options work well, so the choice is yours.
- Cream Cheese. Any brand will work here.
- Feta Cheese. Try to buy good-quality feta cheese that is sold in blocks, and then crumble it with your hands.
- Parmesan Cheese. You can substitute it with shredded mozzarella if you prefer. Both options work great!
- Parsley. You can use fresh chopped dill or basil instead, or skip it altogether.
How to make Roasted Pepper Stuffed Chicken Breast
- Make the stuffing. Mix all of the stuffing ingredients in a small bowl, until well combined.
2. Prep the chicken. Using a sharp knife, cut a pocket into the side of each chicken breast.
3. Stuff the chicken. Divide the stuffing into four (or three) equal parts and spoon it into the chicken pockets. Using toothpicks, secure the stuffing inside.
4. Season the chicken. Generously season the chicken with salt, pepper, and paprika. Brush with olive oil on both sides.
5. Bake the chicken. Bake the chicken in a preheated oven at 400ºF for 25-30 minutes, depending on how large your chicken breasts are. Once cooked, brush the pan drippings onto the chicken (optional).

ROASTED PEPPER STUFFED CHICKEN BREAST
Ingredients
- 3-4 chicken breasts approximately 2 lbs.

- 1 tsp. salt or to taste

- 4 oz. roasted peppers diced
- 1 tbsp. chopped parsley

I kind of like this recipe--it has everything my Bulgarian soul likes-roasted peppers and feta, yumm♡. But i got confused with step 3--it says : "Stuff the chicken. Divide the spinach stuffing into four equal parts and spoon it into the chicken pockets..." which spinach stuffing?

Yes, i made it for dinner yesterday and I loved it! My picky boys and husband didn't understand the "wow" factor from roasted pepper stuffing, but for me it was perfect!
They like simpler things, like your cauliflower fritters and your cabbage with chicken.
