    Garlic Roasted Cabbage is so simple and yummy that you'll wonder why you haven't been making it for years. With just a few well-chosen ingredients, you can put together a dish that is flavorful and filling. Roasting is the best way to prepare this cabbage recipe because it gives it the perfect level of char and tenderness. You are going to love this dish!

    Getting more vegetables into your family's diet can be a bit of a challenge, as I'm sure you know. But this Garlic Roasted Cabbage can really help. With a tasty mix of seasonings, this vegetable dish goes well with so many others. And it also looks gorgeous, with a rosette pattern from the cabbage leaves - perfect for serving to guests!     Main Ingredients

    • Cabbage. Use a medium-sized cabbage head that is not too heavy (the leaves should feel hard), and not too loose.
    • Butter. I used plant-based butter to make a vegan version, but if you prefer regular butter, that's fine too. Olive oil can also be used.
    • Seasonings. Garlic powder, salt, and taco seasoning. Taco seasoning could be substituted with other spices, such as paprika, berbere, zaatar, dried Italian herbs, or whichever spice is your favorite.

    How to Make Garlic Roasted Cabbage

    1. Remove the bruised outer leaves from the cabbage. With a sharp knife, gently cut it into 1-inch-thick rounds.

    2. Spread the softened butter on top of the cabbage rounds and season with salt, taco spice, and garlic powder.

    3. Line a large baking sheet with parchment paper. Arrange the cabbage rounds on the paper, seasoned side down. Now spread the butter on the top of the rounds again and sprinkle the seasonings on as well.

    4. Bake for about 20 minutes at 450 degrees Fahrenheit. Remove the cabbage rounds from the oven, flip them over carefully, and bake them again for another 15-20 minutes. When done, they should be nicely roasted and cooked through.

    Tips for Making Garlic Roasted Cabbage

    • Choose the right cabbage. When choosing a cabbage head, you want to make sure that the leaves are firm and not loose. The outer leaves will be removed so it's okay if they're not perfect. Look for one that has a firm stem and decent weight for its size.
    • Flip them halfway. It might be tempting to just let the cabbage rounds roast throughout the cook time, but you definitely want to flip them at the halfway point. Doing this allows the spices and butter to blend and seep in between the cabbage leaves and give the rounds that gorgeous and delicious char on both sides.

    What to Serve it With

    • As is. This Garlic Roasted Cabbage is so tasty and filling, you can eat it as a light meal or snack during the day.
    • As a side. Serve this vegetable dish beside some of your favorite proteins. Meats (Baked Pork Chops), chicken (Spinach Stuffed Chicken Breast), hummus, or tofu (sofritas).
    • On top of bread. With its perfect mix of spices and garlic, this roasted cabbage can be served on a slice of rustic bread to make it more filling, yet still light enough for a small meal or snack.
    • With mashed potatoes. Mmm... This garlicky cabbage with some smooth mashed potatoes would be absolutely delish.

      Hi Tania, I was wondering if you have ever added bacon to this, I was thinking of trying it and thought maybe you had tried it?

        Hi Margaret! I am transitioning to a vegan diet, so I haven't tried it, but I am sure it will be great! I would suggest cutting the bacon into small pieces and placing them directly on the cabbage. As it bakes, the drippings will go inside the cabbage "steaks" and the bacon with crisp nicely.       Hi!

      I rated 5 stars BC I can tell from looking at the recipe that it is wonderful (I'm a cook with 30 years experience)!

      Thanks for the recipe! Great idea!

      I don't have a stove at home (long story) so I'm going to try using a skillet with a rack and water in the bottom to steam cook.

      First, though I'm going to salt the top and let it sit in the refrigerator for maybe an hour or two to draw out the moisture, then pat it down. Next place it on a *cold* skillet, salted side down and turn the heat to a low high to achieve the crispiness, Remove and place on a plate. Insert steaming rack and pour in about a half cup of water. Place the cabbage on the rack salted side up and season. Place lid on skillet and turn heat down to high medium, checking occasionally. I fully expect it to lose some of that crispiness BC of the steam, but maybe not all. If it loses too much crispiness, empty water from skillet and towel dry. Place back on heat and place cabbage back in, seasoned side down to re-crisp.
      NOTE: The re-crisping process might burn the seasoning. Be careful here.

      This was good!! My daughter used garlic butter and seasoned with the taco seasoning plus some others 😋!! Did not cook on 450° so it could've been crispier..it setting off my smoke alarm🤣🤣so 400° for me! Yes stove was clean😁
