    • Bell Pepper. For extra crunch and sweetness. I prefer the orange color, but any color would work here.
    • Red Onion. Or yellow onion.
    • Herbs. A combination of parsley and cilantro. You can use either one.
    • Lemon Juice. Or lime juice.
    • Olive Oil. Or your favorite oil.
    • Spices. Cumin, paprika, salt, and pepper.

    1. Peel, chop, and dice all of the ingredients, placing them into a large mixing bowl. Mix well and then serve immediately.

    • Use a different dressing. I like this salad simple and light, but if you have a favorite dressing, then you can substitute it here.

    • 1 can (14.5 oz) chickpeas, drained
    • 3 medium Persian cucumbers, peeled and diced

      Oh Tania! This recipe gave me LiFE! 🙂 So so good! And Simple to make too! I made it for my family last week and LOVED it! So I made it for an event last night. I wanted to double the recipe but only had 1 can of chic-peas Urgh! So I used Chic-peas And added a cup of my other favorite bean (White hominy beans). I am happy to share it turned out great and everyone loved it! Thanks for sharing this recipe.
