Good morning, friends! The summer is long gone, but it’s still warm here in Atlantic City. I recommend starting your day with this refreshing yogurt parfait. It is a true delight!
The ingredients are simple and easy to find, and it doesn’t take a long time to cook this parfait either. You can make a homemade granola a day before, or buy it from the store. I always make my own granola for a few reasons:
– it’s less sweet
– it’s fresh
– it’s healthier
– it tastes better
– it’s MUCH cheaper.
That’s why I think you should at least try making it yourself once to see what works best for you. Whatever you do, the choice is yours. I still like you. 😉
You can probably substitute raspberries for blackberries or strawberries and still be very satisfied with the result. RASPBERRY YOGURT PARFAIT
For the raspberry sauce
- 1 cup fresh raspberries
- 1 tbsp orange juice (or 1 tsp of lemon juice instead)
- 1 tsp honey
For the parfait
- 1 cup plain low-fat yogurt
- 1 tbsp honey
- 1/2 cup granola
- 4 fresh raspberries
- Break the raspberries slightly with a fork and place them in a small saucepan on medium-low heat. Add honey and orange juice, and then stir and cook for 5 minutes. Once cooked, let it cool for 5-10 minutes.
- When ready to serve, mix the yogurt and honey and divide the mixture between the bowls. Add raspberry sauce and granola on top. Garnish with fresh raspberries.
