This tasty, pan-seared Flounder with Carrot Noodles is a simple and filling meal. It makes a perfect lunch or dinner, and you won't believe how delicious these carrot noodles are!

This Flounder with Carrot Noodles is one of my favorite recipes. It’s one-pot (hello, time saving and easy cleanup!), it’s flavorful, and it's veggie-packed. If you want to increase your vegetable consumption, try some new flavors, and just have a quick, wholesome meal, this dish is not going to disappoint.
CARROT NOODLES
Of course, you'll need carrot noodles to make this dish. You can make these noodles at home, using a spiralizer (read more about Spiralizing here), or you can buy spiralized carrots in your local health food store. I, personally, LOVE spiralized vegetables, so buying a $30 spiralizer was a no-brainer for me. But if you are not sure how you feel about veggie noodles yet, you may want to buy pre-sliced noodles first, to dip your feet in the spiralizing waters before swimming in them. 🙂
You can use zucchini, butternut squash, beet, or sweet potato noodles instead.

FLOUNDER
I chose to use flounder because it's my favorite fish. I buy wild-caught, frozen flounder fillets, and always have some in my freezer. That said, you may substitute flounder with whatever fish you have on hand. Just remember to adjust the cooking time, according to the thickness of the fish.
How to make Flounder with Carrot Noodles:
1. Heat up the olive oil in a large, non-stick skillet on medium-high heat. Add the flounder fillets and sprinkle with a little salt, pepper, and paprika. Fry for about 2-3 minutes, depending on the thickness of the fillets.
2. Gently flip the fish and sprinkle with some more salt, pepper, and paprika. Cook for another 2 minutes, or until the fish is cooked through. Remove the fish from the skillet and set aside.
3. To the same skillet, add the butter and spiralized carrots. Season them with salt, pepper, paprika, and red pepper flakes. Use kitchen tongs to stir the noodles, and cook for about 5-7 minutes, until they reach the desired softness.**
4. Add garlic and cream, and cook for another minute. Remove the skillet from the heat.
5. Place the flounder fillets on top of the carrot noodles and sprinkle with freshly chopped parsley. Serve.
NOTES:
* Use store-bought or homemade spiralized carrots. To make spiralized carrots at home, just peel the carrots and cut off the ends. Spiralize using the "spaghetti" setting on your spiralizer.
** Depending on your personal preference, you may enjoy the carrot noodles on the "crunchier" or "softer" side. Adjust the carrot cooking time until the "noodles" are cooked to your liking.
SERVING SUGGESTIONS:
Although this dish tastes great as is, you can serve it with some cooked quinoa, rice, couscous, or mashed potatoes on the side.
Serve a slice of fresh lemon on the side as well because lemon juice enhances the fish flavors. Enjoy!
