    This Easy Kale and Sausage is quick to make and has lots of delicious flavors. If you're looking for a healthy and savory side dish to add to your meals, then this tasty recipe is for you.

    This Easy Kale and Sausage is a healthy and delicious side dish that has lots of versatility. It adds both healthy vitamins and minerals, as well as protein and fiber, to pasta, grains, and your morning eggs. The mixture of earthy greens, pungent garlic, and savory sausage adds so much flavor to everyday dishes.

    This dish is nice and easy, and you can prep it while working on other parts of your meal. I love the convenience of it on busy days. This recipe has plenty of possibilities for add-ins and substitutions, so it can work even when you've got limited ingredients in the house. Add this Kale and Sausage to your breakfast, lunch, or dinner because it pairs well with everything. If you weren't a fan of kale, you will be after eating this dish!

    Main Ingredients

    • Kale. Both curly and lacinato kale would work here.
    • Sausage. Use your favorite kind.
    • Beans. Any beans can be used. I added cannellini.
    • Veggie Broth. Or water.
    • Garlic. Fresh is preferred.
    • Olive Oil. Or any other oil of choice.
    • Salt & Pepper. To taste.

    How to make it

    1. In a large skillet, cook the garlic in olive oil for 1 minute over medium-low heat.

    2. Add the kale and veggie broth, cover with a lid, and cook for about 10 minutes, until the kale softens a bit.

    3. At this point add the sausage, beans, salt, and pepper. Stir, cover with a lid again, and cook for another 10 minutes, adding a bit more veggie broth, if necessary.

    Tips for the best Kale and Sausage

    • Take off the stems from the kale. Kale can have a bitter taste, but much of that has to do with the stems. Remove as much as you are able to before chopping and cooking.
    • Use canned beans to save time. If you want to prep this dish more quickly, opt for canned beans over dried. Just make sure you drain and rinse the beans before adding them to the skillet.
    • Let the kale steam and soften. Give the kale enough time to soften as it steams in the veggie broth. Keeping the lid on will trap the heat, speeding up the process and making it much more tasty.
    • Adjust the seasoning to your preference. Depending on the salt and seasonings in your veggie broth, not to mention the sausage, you may want to adjust or even skip the salt in this recipe. Whatever fits your tastes.

    Variations to this Recipe

    • Make this dish into a soup. Add extra veggie broth to this dish to make it into a delicious soup. Add seasonings to your preference and enjoy it with some crusty bread.
    • Substitute the sausage. You can use any type of sausage your like, or substitute another protein. Try chicken sausage, meatballs, or diced extra firm tofu.
    • Add other vegetables. This Kale and Sausage recipe would taste great with the addition of onions, tomatoes, potatoes, or mushrooms.
    • Substitute the kale. You can use another type of leafy green in this dish, including spinach, chard, turnip greens, beet greens, or collards.
