    I love this Cucumber Tomato Feta Salad, especially in summer. It's deliciously refreshing and just perfect alongside pasta, proteins, grains, and so many other things. It's so easy to make and you can even prepare the ingredients ahead of time so you just have to toss and serve it. It's great for barbecues and outdoor lunches, or for serving as an appetizer for a family dinner.

    This salad is really flavorful and healthy. Juicy tomatoes, crisp cucumbers, crunchy onions, and briny feta cheese with fresh herbs make the most scrumptious mix. This Cucumber Tomato Feta Salad should be on repeat all spring and summer long. Let's take a look at the tasty ingredients that make it so good.

    Where to Buy Feta Cheese

    When shopping for feta cheese, try to find the kind that is sold in bricks and stored in brine. That's the best stuff. This feta cheese can be found in large health food stores. Of course, you can buy feta cheese on Amazon. When given an option between cow's or sheep's milk feta, I'd always pick sheep's milk.

    Main Ingredients

    • Cucumbers. I like using Persian cucumbers the most, but other kinds can be used as well. You may choose to peel them or leave the skin on.
    • Tomatoes. Cherry (or grape) tomatoes are the most flavorful, so that's why I recommend using them.
    • Onion. Red onion is best, though other kinds can be used as well.
    • Fresh Dill. Pairs really well with feta and veggies, and adds wonderful flavor. Use parsley if dill is not available.
    • Feta Cheese. Try to use high-quality feta that is sold in bricks, not crumbles.
    • Olive Oil. Extra virgin olive oil is best for this salad. Avocado oil would be my second best choice.
    • Salt and Pepper. Season this salad to taste. Keep in mind, you'll have to reduce the amount of salt because feta cheese is quite salty.

    How to Make Cucumber Tomato Feta Salad

    1. Slice the cucumbers, tomatoes, and red onion. Then crumble the feta cheese and chop the fresh dill.
    2. Place all of the prepared ingredients along with olive oil, salt, and pepper into a large bowl and mix well. Serve immediately.

    Variations to try

    • Add a vinaigrette. This Cucumber Tomato Feta Salad is simply flavored, but if you like a more acidic taste, then add a vinaigrette, either store-bought or homemade.
    • Substitute different dressings. Depending on your preference, you could use lemon juice, balsamic vinegar, dijon mustard, or red wine vinegar to create a dressing that suits your personal tastes.
    • Add some other flavors. This salad tastes amazing with kalamata olives, scallions, mint, or shallots.
    • Try it with protein. For a more filling meal, add some diced chicken breast, crab meat, or tofu to this salad.

    Store this Cucumber Tomato Feta Salad in an airtight container in the refrigerator to keep it fresh. It will last for just one day, though the longer it sits, the softer the vegetables become. As the salt draws out the liquid, this can create a soupiness to your salad.

    If you aren't going to serve it right away, I suggest cutting and dicing the vegetables and herbs beforehand and storing them in the fridge. Then when you are ready to eat, just toss everything together and season. This keeps the salad fresh, juicy, and crisp.

    • 4 Persian cucumbers, sliced

        I don't know about other recipes (this is the first I've watched on her channel) but I do know that this recipe is a very healthy salad. The Cucumbers, onions and tomatoes are heart healthy and will help lower cholesterol. Even the olive oil is one of the healthy oils to use. The feta cheese is also good in moderation. It just so happens that I have everything but the Dill to make this (subbing Cilantro instead) so I will be making this today.
