Cucumber Radish Salad – A healthy combination of refreshing cucumbers, crunchy radishes, and creamy cottage cheese.

Cucumber Radish Salad – A healthy combination of refreshing cucumbers, crunchy radishes, and creamy cottage cheese.

Hello friends! Allow me to introduce you to this fresh and creamy cucumber-radish salad. Growing up in Ukraine, I ate this salad almost every day during hotter months of the year. It is probably the #1 summer salad in Ukraine, and for a good reason. It is easy to make, healthy, and super delicious. I bet you’ll love it!

There are a lot of variations on this salad, but this one is my favorite. We (read: Ukrainians) often add some sliced tomatoes to this salad, which works well, too. I think the best part is the combination of cottage cheese and scallions. My Bulgarian husband prefers feta over cottage cheese, so you can certainly try it with feta, too.

What Kind of Cucumbers to Use

All popular types of cucumber can be used here: English, Persian, Pickling, and Kirby. If the cucumbers have hard and/or waxy skin, I recommend peeling them. If the cucumbers have soft insides filled with large seeds, just scoop them out.

How to Store This Salad

This is one of those salads that is best eaten right away. It can stay up to six hours in the refrigerator. Keep it longer and the cucumbers will start getting soggy, and it won’t look appealing at all. Just make as much as you are planning to eat.

Substitutions

If you don’t like radishes, you can use tomatoes instead. Or use both! Tomatoes make a great addition to this salad and I add them often.

Also, if you prefer, you can use fresh dill or parsley instead of scallions.

My wife and I make this salad regularly as well, with a small change in preparation that allows the salad to sit longer in the fridge. To allow the salad to keep longer in the fridge, we salt our ingredients prior to adding cottage cheese. We let the vegetables stand for about 10-15 minutes, periodically draining water being shed by the salted vegetables. After waiting, we then add cottage cheese. The vegetables will have drained enough that the mixture will remain nicely mixed in the fridge for several days.

Would it be weird to add pineapple to the salad. I just sliced one up fresh and like the combo of the cheese and
Pineapple together, but not sure of all the other added ingredients.

Hi Dale! It does a bit strange to me. Let me know if you'll try it this way.

I make this regularly and add 1/2 cup of light sour cream.
