    This Couscous with Sun-Dried Tomatoes is fluffy and flavorful with the tart sweetness of the tomatoes going perfectly with the rich buttery couscous. You'll love how simple and delicious it is.

    This Couscous with Sun-Dried Tomatoes is such an easy dish to make and has some of the tastiest ingredients. I just love how fluffy the texture is and how much flavor is packed into it. Sun-dried tomatoes rehydrated in broth or water have an intense sweet, tart taste, and the the melted butter adds richness. Combine them with briny feta cheese and fresh herbs, and this recipe is scrumptious.

    This dish complements proteins and vegetables well, so pair it with your favorite dishes, or see some of my suggestions below. You can enjoy it hot or cold as well. I love this as a quick snack or side dish for a bigger meal. Let's look at what you'll need to prepare it.

    Main Ingredients

    • Couscous. Use Moroccan couscous. Pearl couscous won't work in this recipe.
    • Sun-Dried Tomatoes. Use regular or the ones packed in oil.
    • Feta Cheese. When shopping for feta cheese, try to find the kind that is sold in bricks and stored in brine. That's the best stuff. This feta cheese can be found in large health food stores. Of course, you can buy feta cheese on Amazon. When given an option between cow's or sheep's milk feta, I'd always pick sheep's milk.
    • Melted Butter. It gives extra flavor and aroma to the dish, especially if melted to the point of slightly browning.
    • Fresh Herbs. To garnish. Parsley, dill, or basil will make a great addition.

    How to Make this Couscous

    1. Cut the sun-dried tomatoes into small pieces. Bring the water (or broth) to a boil.

    2. Add the couscous and the tomatoes to a small sauce pan and pour the hot water on top. Cover with a tight lid and let it rest for 5 minutes, undisturbed.

    3. After 5 minutes have passed, open the lid and fluff the couscous with a fork.

    4. Add the feta cheese and melted butter, and stir well.

    Tips for the Most Flavorful Couscous

    • Brown the butter. When melting the butter, allow it to just start browning, which will bring a wonderful flavor to the dish. This is easiest to do on the stovetop where you can keep an eye on the butter, taking it off the heat as it begins to color.
    • Cook Moroccan couscous. This smaller-sized couscous works better in this dish than pearl couscous. It also cooks much faster, so stick with Moroccan when making this recipe.
    • Use broth to steep the couscous. Using broth is great because it imparts a lot of flavor into the couscous. However, water works just as well and the other ingredients round out the flavors. But for more intensity, I prefer the broth in this dish.
    • Choose sheep's milk feta cheese. Your Couscous with Sun-Dried Tomatoes will be more flavorful with sheep's milk feta cheese, which has a sharper, fuller flavor that those made with cow's milk. The consistency is also firmer. For best results, go with the block feta in brine.

    How to Store and Reheat

    Leftover Couscous with Sun-Dried Tomatoes can be stored in the refrigerator for up to 3 days in an airtight container. When you want to reheat it, place the couscous in a microwave-safe dish and add a few spoonfuls of water before warming. This will keep it from drying out as it heats.

    What to Serve it with

    • As is. Grab a spoon an enjoy this Couscous with Sun-Dried Tomatoes warm from the stove or cold from the refrigerator.
