I love everything about these cauliflower fritters. Golden and crispy on the outside, tender and succulent on the inside, these 4-ingredient Basic Cauliflower Fritters are my go-to recipe for a quick snack or lunch. I enjoy them the most with some sour cream on the side.
This recipe could easily be customized to your taste. If you feel adventurous, feel free to add some kale, onions, fresh herbs, Parmesan, Feta cheese, or even some corn. Now that I have you all excited about these cauliflower fritters, let's start cooking!

CAULIFLOWER FRITTERS RECIPE:
1. Place the cauliflower into the food processor and process until finely minced.
2. Transfer the cauliflower into a large mixing bowl and add the rest of the ingredients, excluding the vegetable oil. Mix everything well. (You should have a nice, paste-like mixture. If the mixture looks a little too soft and moist - add some more flour.)
3. Using an ice-cream scoop as a measure, form small, ⅓ inch-thick patties. You can make them smaller or larger depending on your personal preference.
4. Fry the patties on medium heat, in a small amount of vegetable oil for about 2 minutes per side.
5. Serve the fritters with sour cream or your favorite sauce.

Hello Tania, forgive me for being overly critical, but, as you opener "....healthy and wholesome meals...", are you aware that flour is probably one of the most UN-healthy ingredients of any food, it has a high glycaemic load/index, will invoke a glucose spike when you eat this, which will cause a higher than normal insulin delivery - or requirement if you are diabetic, which as I am sure you know, is BAD for health. One of your commenters asked if we could substitute other kinds of flour in this recipe, but you informed that almond flour may not hold them together, and you also said that you hadn't tried one of the other commenters flour suggestions. You may not be offering a low carb or keto cooking service, but, as I saw your pinterest post, these do look delicious, but sadly, as a type 1 diabetic, I can't even consider this, and would prefer to see a suggestion on alternates to flour, and I believe that you really should be going that extra step to provide this, so, I am not really going to be able to consider anything you offer. This probably won't reach the public viewed comments section, so I just offer you this in terms of advice.

Hi Mark! I do not provide recipes for any specific diet. I use organic flour is small quantities, which is generally considered healthy. The only other type of flour I tried that worked for this recipe is spelt flour. Maybe look into this kind. Kind regards.

Some people can't eat them due to allergies, some people hate cauliflower. Find a recipe that does suit you, as it ruins it when someone has a carb/glycaemic index moan. There is not much flour in them anyway, and they are more a side or light lunch. Try some frittata recipes, or just eat the vegetable raw.

Tried it with almond flour sinced I didn't have regular, but it wouldn't hold together. Added another egg and some bread crumbs. Worked ok. Had to turn carefully. Next time I will add herbs and seasonings besides s&p, very plain. I added chopped onion to the pan. Will try again with sauteed onion in the patties. It doesn't really meld as such. It's almost grainy, like quinoa consistency, since the cauliflower is put in the food processor. But...it's healthy.
