CAULIFLOWER FRITTERS RECIPE:
1. Place the cauliflower into the food processor and process until finely minced.
2. Transfer the cauliflower into a large mixing bowl and add the rest of the ingredients, excluding the vegetable oil. Mix everything well. (You should have a nice, paste-like mixture. If the mixture looks a little too soft and moist - add some more flour.)
3. Using an ice-cream scoop as a measure, form small, ⅓ inch-thick patties. You can make them smaller or larger depending on your personal preference.
4. Fry the patties on medium heat, in a small amount of vegetable oil for about 2 minutes per side.

I used a 2# head of cauliflower (it was right at 8cups) and doubled the rest ingredients. I made a tiny tester in the skillet. It made 19 plus a little fritter. I added the oil to the mixture which I had added garlic powder and onion powder and Fines Herbes. I put the fritters on a sheet pan that I had put a sheet of parchment paper. I baked 400 degrees for 10 minutes then flipped and cooked another 10. Not as brown as I would have liked but will put in a dry skillet to reheat. Delicious
Perfect! Thank you for sharing, ML!
I read the comments; how about using Almond or Coconut flour instead of all-purpose flour. I hope this helps. I use Almond flour for my pancakes.
