Main Ingredients
- Zucchini Noodles. Read how to make or where to buy spiralized zucchini below.
- Cashews. These nuts absorb some of the delicious sauce while cooking, and also add a nice texture to the dish.
- Peanut Butter. The base ingredient for this sauce.
- Hoisin Sauce. Hoisin sauce is a condiment based on fermented soybean paste with other flavors and spices. It can be found in most large supermarkets and Asian stores. Of course, you can buy it online as well. If you don't have Hoisin sauce, you can use a teaspoon of miso paste instead.
- Soy Sauce. Some salty, umami flavor.
- Sesame Oil. It adds a nice touch of Asian flavors.
- Sriracha. Adds a bit of heat. You can use less or more, depending on how spicy you want this dish to be. You can also use red pepper flakes instead.
- Lime Juice. For a bright burst of citrus.
- Minced Garlic and Ginger. These two pack a lot of pungent flavor and aromatic qualities.
- Fresh Cilantro. Adds wonderfully fresh, earthy flavor.
How to Make these Quick Cashew Zucchini Noodles
1. Spiralize the zucchini on the medium setting. Set aside.
2. Into a large skillet, add the peanut butter, hoisin sauce, sriracha sauce, soy sauce, lime juice, ginger, and garlic and put the heat on low. Stirring constantly, cook it for about 2 minutes or until the sauce starts to thicken.
3. At this point, add the cashews, sesame oil, and zucchini noodles. Using tongs, gently toss the noodles every 20 seconds or so for about 5 minutes until everything is lightly cooked and heated through. The zucchini will release some liquid, which will help to thin the sauce.
4. Lastly, when the dish is ready, add the cilantro in and toss. Serve immediately.
