This Summer Salad with Feta is my “go-to” salad during the summer season. I can easily eat it every day and not get bored with it. The colorful summer veggies mixed with creamy feta and refreshing scallions… What could be better?
Sometimes the tastiest recipes are the easiest to make. When you find a recipe that falls into this category, you’ll want to keep it. I suggest you don’t hesitate and give this salad a try.
You’ll want to find some good-quality, sheep feta cheese. It is sold in brine and can be purchased from large health food stores. It is a very healthy and tasty cheese that you won’t regret buying. Here is an Amazon link, if you’d like to buy it from there.
Once you get your hands on some good-quality feta, the ingredient list is pretty simple:
- 3 medium cucumbers
- 3 medium tomatoes
- 8 radishes
- 1 cup feta cheese crumbles
- 1/2 cup chopped scallions
- 2 tbsp. extra virgin olive oil
- 2 tsp. white vinegar
- salt and pepper, to taste
1. Start by washing and cutting the vegetables into bite-sized pieces.
2. Add in the rest of the ingredients and mix well.
