  • 2lbs small potatoespeeled
  • 1tsp dried Italian herbs
  • 1tsp paprika
  • 1tbsp vegetable oil
  • salt and pepper
  • 3tbsps Blue Cheese Dressing
  • 1medium tomatochopped
  • 1medium avocadochopped
  • fresh parsleyto garnish
  1. Preheat the oven to 375F.
  2. Place the potatoes in a mixing bowl and add dried Italian herbs, paprika, oil, salt and pepper. Mix everything well.
  3. Transfer the potatoes onto a baking sheet and bake until cooked through for about 40 minutes. You can check if they are ready by piercing a toothpick through the biggest potato. If it goes in easily, the potatoes are done.
  4. Once done, smash the potatoes with a fork until they are flattened but still in one piece. Let it cool for a few minutes.
  5. When ready to serve, sprinkle the potatoes with Blue Cheese Dressing and arrange avocado and tomato pieces on top.
  6. Sprinkle with fresh parsley leaves before serving.
