You know the meal was good when you want to cook it again the next day. And the day after that. Can you guess where I am going with this? Yes, these smashed baked potatoes are just THAT GOOD. I’ve done a lot of experimentation in my kitchen recently and this recipe is a winner. Seriously, friends, give it a try.
Is it cold and rainy where you are right now? Because, I’ve got to tell you, we’ve had quite a few rainy days here in NJ. All I want to do is stay home with a cup of hot tea, cuddle with my hubby, read books, scroll through an unlimited amount of recipes on Pinterest and spend some quality time in the kitchen cooking, cooking, cooking. I noticed that I give a preference to colorful recipes. Can you blame me? Everything is grey outside.
Let’s talk a little about the smashed potatoes we are having for dinner today. Or lunch. It doesn’t matter. First, feel free to customize it to your liking. What’s your favorite dressing? Caesar, Ranch, Thousand Islands? Good news — they all work great! Want to make it meaty? Great! Just top it off with chopped bacon, ham or grilled chicken. You can switch the toppings to sweet peppers, asparagus, corn, peas, mushrooms, shredded cheese and lettuce if you get bored with tomatoes and avocados. In any case, you will be happy with it.
Second, it doesn’t take a lot of effort to make it. Just TOSS the potatoes with spices, BAKE for about 40 minutes, SMASH the potatoes with a fork, and SPRINKLE them with dressing and toppings. Your dinner is ready. Enjoy!
