Hey guys! How’s everybody feeling today? How about some Antipasto?
Don’t know what is it? No problem, that’s why I am here.
Antipasto is a traditional Italian first course meal. It could be a cured meat platter, marinated vegetables, pasta salad, olives, or all kinds of cheese in a variety of combinations. Antipasto can usually be prepared in advance and stay refrigerated until ready to use. I like this roasted pepper antipasto, because not only does it look colorful and serves as a great meal starter, but the leftovers can also be used to make the best sandwiches! (Although I doubt there will be any leftovers).
Pick any colors your soul desires. Red, orange, yellow, green – they all are going to work great. Usually the sweetest are the red ones, then orange and yellow, and the green ones are not so sweet. Just something to remember when picking your colors.
