Quick and healthy Quinoa with Mushrooms and Feta makes a tasty and protein-packed lunch or dinner.
This Quinoa with Mushrooms and Feta recipe is so simple, yet so tasty that even my husband who doesn’t like quinoa enjoyed it! Earthy and meat-like shiitake mushrooms fried in some butter, and combined with quinoa and feta cheese… Who can say no to that?
This recipe was inspired by my Potato Gnocchi with Mushrooms and Feta, which was a big hit. It is made with basically the same ingredients; I just substituted gnocchi for quinoa. I am sure this recipe is going to be a big hit in your family too!
When cooking quinoa, I prefer to boil it in vegetable broth, because it adds a lot of extra flavor. Even mixing the water with broth (50/50) is better than using only water. However, if you don’t have broth handy, it’s still worth making this dish and cooking the quinoa in water.
Although I am using shiitake mushrooms in this recipe, you may use portobello or baby bella mushrooms instead. So let’s start cooking!
- 2 cups of cooked quinoa
- 8 oz of shiitake mushrooms
- 1 tbsp of butter
- 1/2 cup of crumbled feta
- 1/2 tbsp of fresh thyme leaves
Start off by frying the mushrooms in butter for about 4-5 minutes, until they start to brown.
To that, add the quinoa, feta and thyme leaves and stir everything together. You are all done!
I suggest using good-quality feta, as it makes a world of difference! Try to find the kind that is sold in blocks packed in brine. You can usually spot good feta cheese in big health-food stores, or it is possible to buy it from Amazon. This Sheep’s Milk Feta Cheese is a true treat!
