This recipe is truly amazing. I cannot even imagine myself eating scrambled eggs cooked in a different way. Have you ever tried a combination of feta and eggs? If not, you better hurry up because it is seriously delicious.
This recipe comes from my Bulgarian husband Stan. He taught me how to make this egg scramble many years ago and we’ve made it at least once a week since then. I remember the first time I tried these eggs. I thought to myself, “Perfect!” And that’s where the name comes from. 🙂
Since there are only two main ingredients, try to get good quality eggs and feta because that’s where the flavor comes from. I always prefer sheep’s milk feta over cow’s milk because it has a much creamier texture. If you’ve never tried the true, original sheep’s feta cheese, it’s time to try it now. Just read the labels when you shop for feta or order it from Amazon.
Without further ado, let’s cook the Perfect Scrambled Eggs.
- 6 eggs
- 1/2 cup good quality feta cheese
- 1/2 tbsp butter
- pinch of pepper
1. Place the eggs, feta and a pinch of pepper into a medium mixing bowl.
2. Whisk everything together.
3. Melt the butter in a non-stick skillet over medium-high heat.
4. Add the eggs to the pan.
5. Cook, stirring continuously, until the eggs are cooked through.
6. Garnish with some extra feta cheese and fresh thyme leaves.
I also love adding some chopped avocado, tomato or roasted pepper on top. Yum!
