Don’t skip this recipe! Treat yourself and your family with these flavorful mini pancakes. It’s just what you need this morning! Warm apple-walnut pancakes with a cup of coffee, tea or milk. Sounds good? Plus, these are easy to make and you most likely have all the ingredients in the refrigerator anyways.
I always wake up before my husband Stan. He works late and I am the early bird. We both enjoy our schedules. I get to catch up with my blog in the morning while he is still sleeping, do the vast majority of my daily tasks, exercise, take a shower and start cooking breakfast. And he gets to wake up just in time to eat it. And if he didn’t ask for a certain breakfast from the day before, surprises are going to happen. This was the breakfast I surprised him with this morning. He loved it! I encourage you, friends, to surprise your loved ones with these apple pancakes as soon as possible!
OK, let’s move on to a few tips.
- If your kitchen is far from the bedroom, there is a chance that the apple-cinnamon aroma will not reach your “sleeping beauty” and wake him/her up. What you could do in this case is: just preheat the oven to 200F, wrap the pancakes in a foil and keep them there until you’re ready to serve.
- Make sure that the griddle you are using has a non-stick coating.
- Don’t over mix the batter: it tends to harden the more you beat it.
- Cook with love. Yes, it is important as well.
