FRENCH TOAST WITH RICOTTA

Ingredients
  • 4slices white bread
  • 2 eggs
  • 1tsp vanilla extract
  • 2tbsp maple syrup
  • to taste cinnamon powder
  • 2tbsp vegetable oil
  • 6-8tbsp ricotta cheese
  • 12 strawberries
  • 8-10 blackberries
  • to sprinkle maple syrup
Instructions
  1. Whisk together egg, vanilla extract, maple syrup and cinnamon.
  2. Soak bread slices in the egg mixture and fry in vegetable oil about 1-2 minutes on each side, until nicely browned. Remove the bread from pan.
  3. Cut strawberries in half, throw them in the hot pan from your toast and fry them for just a minute. I like the effect this has on the strawberries, but you can skip this step.
  4. Arrange your toast on the plate. Top with ricotta cheese and berries. Sprinkle with maple syrup.
Recipe Notes

You may use any berries or fruits you like with this toast. I picked strawberries and blackberries because of their bright colors and flavors.
