Ingredients
  • 3tbsp olive oil
  • 1medium onion, diced
  • 1 green bell pepper, diced
  • 1lb. ground beef
  • 1tsp chili powder
  • 1/2tbsp cumin powder
  • 3medium tomatoes, diced
  • 114.5 oz can of diced tomatoes
  • 232 oz cartons of beef broth
  • 16oz brown lentils
  • 1/2cup fresh cilantro, chopped
  • sour cream to serve
Instructions
  1. In a large Dutch Oven, saute the onions with peppers in olive oil for 5-7 minutes on a medium heat.
  2. Add beef and cook, breaking into pieces for another 5 minutes.
  3. Add chili powder, cumin, fresh and canned tomatoes, lentils, beef broth, salt and pepper and bring to a boil.
  4. Reduce heat to medium-low and cook for about 45 minutes, until lentils are soft and cooked through. Add chopped cilantro, stir and enjoy!
